Mediterranean Veggie and Rice Bowl

Hey readers! Hope you are having a great Thursday :)  This recipe is one of many that can be adapted to everyone in your household- vegans, vegetarians, flexitarians, meatatarians... you get the picture.  Most of us have heard of the benefits of the Mediterranean diet- how healthy fats from olives, olive oil, legumes, peppers and some cheeses (including feta) can lower our cholesterol, even out our blood sugar, and greatly lower our risk for heart disease.  Because of these wonderful benefits, I wanted to create a meal based on flavorful and colorful Mediterranean ingredients.  This rice bowl was very satisfying and we didn't feel guilty about having a little extra because it was so healthy!  I hope your family enjoys it as much as we did.

Mediterranean Veggie and Rice Bowl

Ingredients:
  • 3 cups cooked brown or wild rice
  • 1/2 pound chicken, tofu, legumes or other protein of your choice
  • 3 tbsp olive oil with herbs and garlic (see recipe)
  • 1 red onion, sliced
  • 1 white or yellow onion, sliced
  • 10 small button mushrooms, sliced
  • 1 cup black or kalamata olives, sliced
  • 2 roasted bell peppers, deskinned and chopped (see how to roast a pepper here)
  • 6 oz. herbed feta cheese, cut into cubes
  • Juice from 2 lemons
